Granny's Yeast Cake -                                                            (good with apples, plums, blueberries)


Ingredients:

3 pounds apples, peeled and thinly sliced

1 ½ cups flour

¾ cup sugar

1 packet yeast, dissolved in ¼ cup warm water

1 egg at room temperature (or warmed for 15 seconds in the microwave)

Mixture of cinnamon and sugar to sprinkle over apples

Butter slices to place over apples

Cream for whipping (optional)


  • Mix flour and sugar together in a bowl.
  • While mixing slowly, add the packet of yeast dissolved in warm water.
  • Add the egg.
  • Drizzle milk in a couple of drops at a time.  One drop too much and the whole dough will get gummy.
  • If dough gets gummy and sticky, add enough flour so you can roll it out.
  • Let dough rise covered in a warm place for 30 minutes.
  • Use flour on rolling surface and rolling pin and roll out the dough.
  • Transfer to a greased cookie sheet and finish edges.
  • Place apple slices on dough in neat pattern (3 lines down and the rest across)
  • Top with cinnamon-sugar mixture.  Dot in many places with butter.
  • Bake for 45 minutes in pre-heated 350 degree oven.  Allow to cool before slicing. (My oven finishes the job in 30 minutes.)
  • This can be frozen. When ready to eat, remove from freezer and either let thaw at room temperature or place in microwave for approximately 20 seconds.  Serve with whipped cream.
