1 ½ pounds ground beef chuck
1 cup soft bread crumbs
½ cup finely chopped red onion
¼ cup chopped parsley
¼ cup chopped dill
1 egg
1 teaspoon salt
¼ teaspoon pepper
1 15-0z. can tomato sauce
½ cup sugar
2 tablespoons firmly packed brown sugar
2 tablespoons vinegar
2 tablespoons prepared mustard
Heat oven to 350. Place ground beef, bead crumbs, onion, salt, pepper, egg, parsley, dill and half the tomato sauce in a mixing bowl. Mix together with your hands. (The original recipe said to toss lightly with a fork… yeah, right!) Place in a shallow baking dish and shape into a loaf. Bake 50 minutes.
While meat is baking, make sauce. Combine remaining tomato sauce, sugar, brown sugar vinegar and prepared mustard in a saucepan. Cook over moderately low heat, stirring occasionally until mixture comes to a boil. Pour over meat loaf and bake an additional 10 minutes. Serves 6.
